Traditional Bajrichi Bhakri is the thick, hand-shaped pearl millet flatbread of Maharashtra — a close cousin of Gujarat’s Bajara Rotla, but made in the Maharashtrian bhakri tradition. Made from pure bajri (pearl millet) flour and water, this hearty, naturally gluten-free bread has been the staple of Maharashtra’s farming communities for generations, particularly during winter months when bajra flour was at its most nourishing.
