Known by different names across India, Puran Poli is made on festival days — Holi, Gudi Padwa, Diwali, and weddings — and is considered the ultimate expression of festive generosity. Our recipe follows the traditional Gujarati-Maharashtrian method: slow-cooked chana dal, raw jaggery, fresh cardamom, and sometimes a hint of nutmeg.

How to Serve Puran Poli

• With warm ghee — drizzle generously just before serving: the traditional way
• With amti (thin spiced lentil soup) — the Maharashtrian festival meal pairing
• With warm milk and a pinch of turmeric — a classic Gujarati accompaniment
• As a dessert or sweet snack — served warm on its own at the end of a meal
• With aamras (mango purée) — a seasonal summer combination

Reheating tip: Warm gently on a tawa for 30–60 seconds each side with a little ghee. Avoid overheating as the filling can dry out. Also lovely at room temperature.
